Abstract:
Aromatic, antibacterial, and antioxidant properties of flavor and fragrance can be used in all aspects of life, but their unstable, volatile and oxidizing properties greatly limit their application. Micro/nanocapsule technology can be used to encapsulate flavor and fragrance, which increases their stability and delays their release. This paper firstly introduced the recent technologies about the preparation of micro/nanocapsules of flavor and fragrance and the classification of wall materials, then summarized their application in textiles, paper, leather, and food. Additionally, the existing shortcomings of micro/nanocapsules of flavor and fragrance were pointed out and the future research priorities were looked forward.
